Grab and go, dense & filling
- Preheat oven to 300 degrees.
- Lightly grease 6-cavity doughnut pan (or muffin tin) and set aside.
- In large bowl, combine the oat flour, chia seeds, baking powder, salt and cinnamon.
- Add the maple syrup, milk, and vanilla and stir until combined...it will be very runny but this is normal.
- Spoon the batter into the doughnut pan.
- Bake doughnuts 22-26 minutes until firm to the touch and a toothpick inserted comes out clean.
- Cool the doughnuts in the pan for 10 minutes and then invert the pan onto a cooling rack.
Coconut-Lemon Whipped Cream:
- Chill can of coconut milk in fridge overnight (or for at least 9-10 hours)
- About 1 hour before making the cream, chill mixing bowl in the freezer
- Flip the chilled can of coconut milk upside down and open with can opener.
- Pour off the coconut water and scoop the solid coconut cream into the chilled bowl.
- Use electric hand mixer and beat the cream until smooth and fluffy. Add syrup, lemon juice and vanilla and beat to combine.
- Drizzle coconut-lemon whipped cream over the top of doughnuts...or use it as a dip for a travel-friendly option
