Bring stock to boil. Combine porcini and stocking a small heatproof bowl. cover and let stand until cool to reconstitute porcini.
Remove porcini with a slotted spoon, set aside and reserve liquid. Let liquid settle 5 min. then pour into separate bowl, discarding sandy residue.
Rinse porcini under cold water. Bring stock to boil, combine porcini and boiling stock i heatproof bowl.
Cover and let stand until cool.
Remove porcini from cooking liquid, aet aside,reserve liquid.
Let liquid settle 5 minutes, then pour clear liquid in bowl, discarding sandy residue.
Preheat oven to 350 Warm 2 T oil in dutch oven. Pat meat dry, and working in small batches brown meat well on all sides. Add oil if needed.
Add remaining oil to casserole and heat over medium heat. Add pancetta and cook about 6 min.
Stir in onion, carrots etc Cover and cook stirring once or twice until nicely colored.
Sprinkle flour over vegetables and cook 3 minutes.
Stir in tomato paste, wine, soaking liquid.
Return meat to casserole, add salt and pepper, bring to a simmer.
Cover and bake for 1 hr.
Stir in porcini, return to oven and simmer uncovered until meat is tender and stew is thick, about 1 hr.
Discard bay leaves and adjust seasonings. Stir in parsley.
