In mixing bowl combine the yeast , warm water and sugar. Stir to dissolve let sit for 10 minutes to Proof yeast.
Add 3 1/2 Tablespoons of Oil, sugar, and salt and sir to combine. Add 1 1/4 cup of flour and mix with your hands to form a ball. Dust ball with flour and knead dough adding flour 1 tablespoon at a time until dough is lightly tacky not sticky, Oil bowl and turn and rub dough ball until coated. Cover bowl with plastic and let sit in warm place for 30 minutes.
In a 10" deep dish pizza pan add remaining oil and coat bottom of pan . Place proofed dough in center of pan and with your fingers work the dough out to cover the bottom of the pan. With your thumb on the outside edge of the pan and your fingers on the inside, begin pinching the dough up onto the sides of the pan for about 1 1/2".
Cover bottom of the pan with the mozzarella cheese slices.
For a sausage Pizza :
Add the raw sausage directly on top of the cheese. Holding the sausage in your hand, pinch and pull pieces of the sausage and evenly distribute around the bottom of pizza. Add the Pizza sauce and top with the Parmesan cheese.
For Pepperoni pizza:
Same as above except substitute pepperoni for sausage. You can use both if desired.
For a Pizza with cooked vegetables:
Same as above except substitute the vegetables for the sausage.
Place oven rack to middle of oven and preheat to 400 degrees F.
Place pizza in oven and check pizza at 30 minutes. If the crust is golden and the cheese is gooey your pie is ready. If not cook another 10 minutes and check for the same.
Remove from oven and let stand for a few minutes before cutting, Remove from pan and cut into 4 pieces.
