Using food processor, purée roasted green chillies, tomatillos, cilantro, green onion, Serrano and lime juice.
In a saucepan, add veg broth, water and spices and place over medium to high flame. Add purée to pan, stirring in well. Bring to a slow boil, then lower flame and slowly add American cheese, whipping as needed, and make sure it doesn't stick to the bottom of the pan. When cheese is melted and mixed, remove from heat. Yields 1 quart.
Fill tortilla with 1oz chicken, then roll up and place in baking pan. Top with mixed shredded Mexican cheese as needed and place in hot oven for four minutes until cheese is melted. Top with boom boom sauce and serve hot.
