-2 large chicken quarters WHOLE for 2 servings
-used 1/4 (or even a bit just tbs) soy sauce to avoid eventual saltiness
- No salt anywhere else!
- use 1/3 cup rice vinegar and one large (even two) chipotle pepper. Leave whole
- used 3 garlic cloves and 3 bay leaves
- wait to turn the broiler on until sauce is almost reduced (can take a really long time). Broil for 5 minutes on the uppermost tray. Use a small pot if possible to avoid using a lot of water to cover and poach the chicken and eventually have to reduce it for much longer
- simmer on VERY low simmer (level 3 or maybe 4) UNCOVERED as the chicken will continue cooking in the oven
