Preheat oven to 325. Heat 2 Tbs. olive oil in a wide oven-safe pan with lid. Brown chicken on both sides and season with thyme, salt, and pepper. Add peeled garlic and 1/2 cup olive oil. Cook chicken for about 1 1/2 hours. Use extra oil for dipping french bread.
