Easy slow cooker
1. In a 5-6qt slow cooker, combine carrots, celery, onion, barley, beans, broth, some thyme, salt & pepper, and 2 cups of water
2. Nestle the chicken into the veg. Mixture and cook covered until the chix is cooked through and shreds easily and the barley and beans are tender. 5-6 hours on low or 3-4 on high
3. Remove and discard the bones and cartilage. Using fork, break up chix into large pieces.
