Suggest a better description1) Day before place the chicken in a large Dutch oven or casserole. Barely cover with cold water and add the celery, onions, carrot and salt and pepper. Bring to a simmer, cover and cook one hour, or until chicken is tender.
2) Let the chicken sit in the broth overnight in the refrigerator. Next day, remove the surface fat. Remove chicken pieces from bones and set pieces aside. Strain broth and measure 10 cups of the stock.
3) Bring stock to a boil. Add veggies. Simmer 10 minutes. Adjust seasonings. Add chicken pieces to the sauce.
4) Mix together 1 cup stock and 1 cup of flour. Gradually stir into the pot.
5) Sift together the remaining flour, 1/2 tsp salt and baking powder, as well as Herb de Provence. Stir in the milk and melted shortening to make a soft dough. Drop dough by spoonfuls onto simmering chicken mixture. Cover tightly and cook, without lifting cover, at least 15 minutes - 20 min. if the dumplings are big .For a little variety, add fresh herbs to the dumplings.
In place of these dumplings, Bisquick dumplings work nicely.
