In a large pan cook garlic,onion and celery in oil, for 3-4 mins or until soft.
Add rice, mushrooms and chicken.
Add 2 ladlefuls of stock to rice, simmer.
Once stock absorbed continue adding a ladleful at a time until rice is
tender, about 20-25 mins.
Top with parsley.
Serve with Parmesan and bread.
