1. Prepare lentils as instructed on package. Carrots, onions, celery are nice additions. You should have about one quart of lentils after cooking.
2. Sauté onion.
3. Sauté chicken.
4. Combine lentils, onion, chicken, walnuts, and craisins, and serve.
NOTE: Can also be eaten cold.
