Great Thai dish.
Preheat oil in deep fryer or frying pan to 180?C.
Combine ingredients in a large bowl and mix well (it will be quite wet).
Divide into walnut sized balls, dust with rice flour.
Deep fry in batches, turning occasionally, until golden and cooked through, about 2-4 minutes.
Drain on absorbant paper. Season with sea salt flakes and serve with cucumber and chilli garnish and a thai style dipping sauce.
