This is an easy and wonderful dish, only 5 ingredients. You can leave out the chicken and the rice casserole makes a wonderful side dish. Your family will love it and you will love the ease.
In a casserole dish add rice, butter or margarine, french onion soup and beef broth. Lay chicken breasts (you may use chicken tenders instead) on top. Bake in a 350 degree oven for 45 minutes. If only making the rice dish, without any chicken, cook in oven for 30-40 minutes, til liquid is all gone.
I have cooked this same recipe in a large pot on top of the stove at a low to medium heat for 30-45 minutes. I cut the chicken up in small pieces and add to the casserole. Makes an easy alternative to using the oven.
