Heat the olive oil in a large skillet on medium heat. Season the chicken with the salt and pepper. Once the skillet is hot, add the chicken and cook for 5 minutes on each side. Remove the chicken; cover and keep warm. Add broth and milk to the skillet; mix well. Bring to a boil. Stir in rice and broccoli; top with the chicken. Cover and reduce heat to low. Cook until the rice soaks up the liquid. Sprinkle the cheese on top and cover to melt the cheese.
