Season chicken with salt and pepper; place in a crockpot. Add all remaining ingredients and lightly stir. Cover; cook on high 3 to 4 hours, or on low 7 to 8 hours, until chicken is fully cooked. Remove chicken and place in large bowl. Shred each piece using two forks---one to hold the chicken in place the other one to shread it. Return shredded chicken to crockpot, and stir.
Season to taste witth salt and pepper.
