Place a saucepan over a high heat. Pour in the chickenstock, then add the chicken thighs and mushrooms
Add the ginger to the pan along with the star arise,spring onions and rice wine. Season with a big pinchof sea salt and a small pinch of white pepper,
Bring the soup to the boil, skimming off any impuritiesthat might rise to the surface. Once boiling, reducethe heat to a strong simmer and cook for 10 minutes
Meanwhile, bring a kettle of water to the boil. Pourinto a clean saucepan over a high heat and season with salt. Add the noodles and cook for 3-4 minutes, or until just tender. Drain the noodles and hold them under running cold water until cool. Drain again and put to one side until needed.
Remove a chicken thigh from the broth and check ifit is cooked through by piercing the thickest part with the tip of a sharp knife; the juices should run clear with no pinkness. If cooked, remove all the chicken pieces and the mushrooms from the broth and put to one side.
Using a slotted spoon, remove the star anise, gingerand spring onions from the broth and return it to ahigh heat. Add the soy sauce and taste for seasoning.
Roughly chop the choi sum into 7cm lengths, and separate the stalks from the leafy parts. Add the stalksto the saucepan and allow to cook for 2 minutes.
Remove the skin from the chicken thighs and shredthe meat, discarding the bones.
Add the choi sum to the broth and turn the heat off.
Divide the noodles between four bowls and top withthe shiitake mushrooms, chicken and choi sum then ladle over the broth. Garnish with the bamboo shoots and microherbs and a drizzle of sesame oil.
