Creamy casserole with chicken, spinach and artichoke hearts.
Cook noodles as directed for al dente, set aside.
Melt butter in large saucepan, saute onion for 5 minutes until soft then stir in flour and cook 1-2 minutes. Slowly add milk and chicken stock, bring to boil stirring constantly until thickened. Remove from heat then add sour cream, mayo, lemon juice, and seasonings mixing well. Add spinach, chicken, and cooked pasta then mix well. Fold in artichoke hearts.
Spoon the mixture into a buttered 13 x 9" baking dish, top with cheese and bake at 350 degF for ~30 min until bubbly and starts to lightly brown cheese. After 30 min, if cheese hasn't started to brown turn on broiler and monitor closely until lightly browned...remove and serve warm.
