PREHEAT oven to 350F.
GREASE the baking dish.
ARRANGE chicken in a single layer.
COMBINE 1/2 cup of the juice, salt, pepper, and brush this mixture over the chicken.
IN a separate bowl combine croutons, apple, onion, sugar, curry powder, poultry seasoning and garlic (fresh may be used over powder).
STIR in 1 1/2 cup of the apple juice into the bowl of dry ingredients. Mix well.
SPREAD mixture over chicken breasts.
COVER and bake for 45 minute - 1 hour.
SERVE over the cooked rice.
