This is one of my Son's favorite soups...Nellie
In a pot, warm oil and sauté onion, stirring, 2-3 minutes. Add boiling broth, grated carrots, potatoes, and cook, 12 minutes. Mix chopped parsley or dill, salt, and pepper into ground chicken. Using wet hands, form mixture into small meatballs. Drop balls into soup, cook, for 7 minutes. NOTE: you can substitute quinoa noodles for potatoes. NOTE: Paleo or Primal diet omit potatoes and pasta and increase amount carrots.
