Suggest a better descriptionCombine all dry ingredients (2/3 cup flour + 2/3 cup corn starch + 4 teaspoons baking powder + 1 teaspoon salt) together with a whisk. Whisk in ice water (I substituted for cold beer) slowly until you get a very thick pancake like batter. Store batter in fridge while you prep chicken.
Cut chicken breast lengthwise into 1" strips, then cut strips into 1" cubes. Put remaining 1/3 cup flour into a bowl and add chicken to bowl. Toss (dredge) chicken cubes in flour until fully coated.
Fill a heavy bottom pot with at least 1-2 inches of canola oil and heat to approx 350°F. Take chicken cubes and place in batter. Rub off excess batter on side of bowl and drop into the hot oil. Pro tip - toss only one piece in at the beginning to make sure your oil is up to temp. If it begins to boil instantly, go nuts with the rest.
Cooking time about 7 minutes per batch, until golden brown, flipping over about halfway through to evenly cook.
