Give it a go!
To make the basic sauce - melt the butter and one tablespoon of oil in a frying pan. Add onions ginger and garlic and gently sweat for approx 15 mins, turn up the heat for a few mins until onions are beginning to colour. Add curry paste and continue to simmer for 3-4 mins, add tomato paste and remove from the heat. Put the mixture in a food processor and whizz until smooth.
You can keep this sauce base in the fridge for a few days!
Add the remaining oil to the pan and fry chicken for a few mins until browned on all sides.
Add the sauce and other ingredients except the spinach and simmer until the chicken is cooked through. Add the spinach in handfuls until wilted.
Serve with fluffy rice
I split the making over a couple of days, make the sauce on Sunday and finish on a busy week night bliss
