1. Heat olive oil. Saute onion, carrots, celery till tender; Add broth, tomatoes, bay leaves, spinach. Bring to boil, then simmer for about 30 minutes. Add basil and parsley. Simmer for another 15 minutes. Then add chicken and heat. Salt and pepper to taste.
