Season chicken with S&P, Add chicken breasts and sauté 2-3 minutes per side or slightly browned.
Lower heat to medium, add olive oil, tarragon, shallots and a splash of wine. Cook 5 minutes until tender.
Remove chicken breasts to heated platter
Add white wine and chicken stock to pan. Turn up heat to boil and reduce by half. Pour sauce over chicken.
Reduce for 3-4 minutes to make sauce thicker.
