Preheat oven to 475
Combine bread crumbs, parsley, tarragon, salt and pepper
Mix mustard and butter in a small bowl and coat chicken pieces with mustard mixture
Dip in crumb mixture and pat
Bake for 10 min on each side until no longer pink (thick 13 min)
