A delicious, saucy take on bruschetta as a main dish. Hearty and filling. Great served with a side caesar salad.
Prepare the salad dressing using the less oil method. Place the trimmed chicken breasts in the dressing and marinate at least 4 hours, or overnight. In a large ovenproof skillet, heat the oil, and add the chicken to brown on each side. You may have to batch cook it. When done, add all chicken back to pan, pour remaining dressing over chicken, and bake 30 minutes or until cooked through. Remove from oven, and place sliced tomatoes on top of the chicken, and then sprinkle the cheese on top. You may need more cheese depending on your tastes. Place back in the oven and broil until the cheese is slightly browned and bubbly. Remove, let cool slightly and serve
