If you don't like mushrooms, add any other cooked vegetables to the filling. It's a great way to use up those leftover beggies in the fridge.
1. Place one chicken breast between two sheets of plastic wrap. Using a meat mallet pound the chicken into ¼-inch thickness. Repeat with the remaining chicken breasts.
2. Combine the molasses, oil, lemon juice, soy sauce, worchestershire, ground ginger, and garlic in a ziptop bag. Mix well. Add the chicken breasts, close the bag, and shake to distribute the marinade. Refrigerate for at least 8 hours.
3. Melt the butter in a large sauté pan. Add the mushrooms and green onions. Season with salt and pepper. Saute over medium-high heat until the vegetables become tender, stirring frequently, about 6 minutes.
4. To make a chicken bundle crisscross two pieces of bacon on a flat surface. Center one of the marinated chicken breasts over the bacon (discard the marinade). Spoon 1/4 of the mushroom mixture on top of the chicken breast. Fold the chicken up and over the filling. Fold the bacon over the chicken. Set on a baking sheet, seam side down. Repeat with the remaining bacon, chicken and filling.
5. Starting seam side down, grill the chicken over moderate heat. Flip the chicken after 20 minutes. Grill for an additional 15 minutes, or until the bacon and chicken are cooked through.
