1. Season chicken thighs well with salt and paper.
2. Place chicken thighs in the bottom of slow cooker. Pour all of the other ingredients over top. Stir.
3. Cook on high for 4 hours or low for 8 hours.
4. Remove bay leaf. Remove lid and let sauce thicken while you cook your pasta. Be sure to taste it and adjust the seasonings if needed.
5. Serve over pasta.
