Nice basic cacciatore recipe. I use a wok to brown the bird and fry the vegetables.
Put salt, pepper and flour in a bag. Shake to mix. Add chicken and shake to coat.
Brown the bird, 5 minutes a side. Remove.add bell pepper, onion and garlic and cook 5 minutes over medium heat.
Add wine and simmer til reduced by half.
Add tomatoes (with juice), capers and oregano.
Now I ditch the wok and grab a baking dish. Add the chicken and the sauce. Cook at a simmer for 30 minutes.
Sprinkle with basil.
Serve with pasta, rice or gnocchi.
