1. Preheat oven to 375
2. Sauté the onions celery carrots together
3. Add garlic u til fragrant
4. Turn up the heat to high and pour the balsamic vinegar in
5. Turn down the heat and reduce the vinegar by half
6. Add tomatoes chicken broth coconut milk
7. Add parsley thyme mushrooms and bring to a boil
8. Turn heat down to low and prep the chicken
9. Cut the chicken in chuncks and throw into pot
10. Bake for 20 to 30 min
