1. Microwave the garlic cloves until soft, 10 to 15 seconds. Peel. Mash with a fork, adding oil and mustard. Mash into paste.
2. Heat a large nonstick frying pan over medium-low heat. Spread half of the garlic past onto each of 2 flatbreads. Layer each with half the chicken, lettuce, tomato, onion, and cheese. Top with the other two flatbreads.
3. Cook each sandwich in the pan until lightly browned on the bottom, about 4 minutes. Do the same to the other side.
4. Cut each sandwich in half before serving.
