Suggest a better descriptionHeat oven to gas 6. Season chicken coat lightly in a little flour. Heat oil in a large ovenproof casserole and brown on both sides over high heat remove chicken and set aside.
Reduce heat add onions and bacon lardons cook for 5-8 minutes till golden. Add garlic, sprinkle in plain flour cook fot 1 minute, stirring to prevent sticking.
Add mushrooms, bay leaves, redcurrant sauce and orange zest, then pour in wine and stock, season and bring to boil. Return chicken to pan make sure its well covered with liquid. Put on lid and cook in oven for 30 minutes.
Meanwhile prepare the dumplings, put flour, breadcrumbs, tomato paste and butter in food processor blitz to a crumb. Add thyme, parsley, eggs and season. Briefly blitz to a dough. Using floured hands, roll dough into 6 even sized balls.
Remove casserole from oven after 30 minutes, add dumplings and cook for another 20 minutes.
