This recipe came from my grandmother's recipe file (Mamas).
Cook whole Chicken with salt, carrots, celery & onion for about 3 hours. (Note: this is before young chickens were readily available in the grocery store and probably applied to a chicken raised outdoors, at home that was probably tougher). Remove meat and cut into pieces. Save stock.
Melt butter, blend in flour and salt. Cook to form a roue. Add 2/3 cup stock , stir until thickened. Add mayo, lemon juice and stir til smooth. Add remainder of ingredients (except chips). Turn into 1 1/2 qt casserole dish, cover with crushed chips and flakes. Bake at 350 degrees for 30 minutes to heat through.
Great cheap company party dish.
Save remaining stock for other recipes.
