Place 32 ounces of chicken broth in a large pot. Add cubed chicken, cubed potatoes and mixed vegetables. Salt & pepper to taste. Cook on medium-high for 15 minutes or until done. Add cream of celery, cream of chicken, Rotel tomatos, chicken bouillon cubes, Greek seasoning and cheese. Cook and until smooth and hot. Stirring occassionally.
