Cube boneless skinless chicken breasts. Heat oil over medium heat and add garlic and sauté until lightly browned then add chicken breasts meat and onion powder. Cook for about 1-2 minutes just until meat is lightly seared. Then transfer all other ingredient (except cheese and sour cream) into slow cooker. Note if you are missing chicken broth try using all of the liquid in the beans and adding water. Cook on low for about 6-8 hours (on high about 3-4 hours but you need to check the chicken more to make sure it is cooked). Prepare Onion, Cheese and Sour Cream as a garnish. Serving Size is one cup.
To add a depth of flavor and sweetness try adding a roasted Red Bell Pepper. With tongs lightly roast Bell Pepper over open flame and then diced and add with other ingredients to slow cooker.
