Chop chicken into bite xized pieces. Place in a bowl or large plastic bag. Squeeze the juice of one lemon over chicken. Add 2 tablespoons of honey. Mix well to coat. Set aside to marinate.
Drizzle olive oil and one tablespoon of butter into a large saucepan. Pour in chicken and marinade. Spread out and cook over medium heat until all pieces are done. Remove from pan and set aside.
Using the same pan, add in garlic and cook for one minute. Add 2 teaspoons of honey.
Add peas to pan and cook for 2 more minutes. Add 5 tablespoons of adobo sauce (more or less to taste). Stir in 4 cups half and half and 2 cups of parmesan cheese.
Turn to low and let simmer 5 minutes.
toss penne and chicken in sauce until coated.
