Suggest a better descriptionMarinate chicken with garlic, soy sauce, patis and black pepper atleast 2 hours before cooking.
Rub a little flour on chicken and fry quickly (half cook) just enough to brown both sides.
Drain excess oil and arrange in casserole.
In another frying pan, saute crushed garlic and onions.
Remove onions and garlic from the pan, drain excess oil and place in casserole with chicken.
Pour 1 heaping teaspoon of flour in remaining oil in frying pan and stir.
Low the fire and brown, add 2 cups of water slowly.
Add 1 tbsp soy sauce, 1 tbsp patis and squeezed calamansi juice.
When sauce thickens, pour it all into the casserole with chicken.
In medium heat, let it simmer covered.
