Coat pan with cooking spray
Mix 1 cup fresh bread crumbs with 1 tsp thyme leaves and 2 T Olive Oil. Toss to combine
Mix ¼ cup grainy mustard with ¼ cup mayo and ¼ cup white wine. Set aside
Lay out a piece of ham, place a piece of cheese on top, then a piece of chicken. Season the chicken with salt and pepper. Wrap the chicken up in the ham and place in a pan seam side down. Repeat x5 (6 total)
Spread 2 T of mustard mixture over each roll-up. Then top each with 2 T fresh bread crumb mixture.
If baking Immediately – bake 40 minutes in 350F oven until baked through and crumbs are crispy.
If prepping for freezer – lay piece of wax paper over chicken and cover tin pan with foil. Place instructions on top and wrap whole thing in two layers of plastic wrap. Freeze until ready to defrost.
