Add oil to plan and soften onion.
Drain and rinse beans and corn, add to plan with salsa and seasonings
Cook for 5 minutes.
Grease griddle with olive oil or butter.
Places tortillas on griddle, fill with even portion of cheese and cooked filling, top with tortilla.
Flip until both sides are golden brown.
