Creamy Chicken, Corn, Potatoes, and Celery
Note: This ultimately requires a VERY large pot.
1."Step 1" can be done well ahead of the rest and is NOT included in the total or active times above: Stew chicken in up to 8 cups of water until it is tender and falling off the bones. Cool. Remove chicken from pot and pick the meat from the bones, discarding bones and skin. Dice the chicken into 1/2-inch pieces and set aside (in the refrigerator if you won't be using it for several hours). Chill the broth so that you can remove and discard the fat that rises to the top and solidifies. (Optionally you can obtain cooked chicken and chicken stock in a variety of other ways.)
2. Chop onion and celery and sauté in butter.
3. Dice potatoes; combine with half the chicken stock, salt and pepper, paprika, bay leaves, and the onion and celery from step 1. Bring to a boil and boil until potatoes are tender. (Add water if needed to have enough liquid for boiling, but remember that you are aiming for a fairly thick end product.)
4. Make a roux from the milk and flour and add to the potato mixture, continuing to cook and stir until the mixture thickens.
5. Meantime bring the remaining half of the broth and the chicken to a boil.(adding water if necessary to make 2 cups of liquid). Also cook 2 cups of corn.
6. Combine everything into the VERY large pot I mentioned. Add the parsley (and cooked and crumbled bacon if desired). Allow some time over low heat and with some stirring so that flavors can mingle, but do not bring to a boil again.
