These fritters make a nice lunch with salad. I don't add the chilli when making them for little kids as it adds a bit of 'kick'.
Combine the chicken, creamed corn, corn kernels, cheese, chilli and eggs in a large bowl. Season with salt and pepper to taste. Mix well. Add the flour and mix - the mixture should combine and stay together well.
Heat oil in a frypan or skillet. Drop 1/4 cupfuls of mixture in the oil and shallow fry 4-5 minutes on each side until golden. Drain on absorbent paper before serving. Makes 16 fritters.
