This curry takes along time to cook, but in the end the infused tastes and flavors are defiantly worth it!
1.first you want to dice your onions and peppers, you also want to slice your mushrooms, then place in a bowl and leave to one side.
2.you then want to cut up the chicken, then you want to get a frying pan out and fry off the chicken in some oil (on a medium heat), or chilly infused oil (if you want it spicy) use as much or as little oil as you want it doesn't matter how much you use.
3.when the chicken is cooked through or golden brown you want to check if there is any liquid from the chicken if so, simply pour the liquid down the sink, if not proceed to the next step.
4.once the chicken is golden or cooked through you want to add the peppers, onions and mushrooms you added before, then cook for around 5 minutes constantly moving the content around so it does not burn.
5.now add a tin of coconut milk and stir it around, leave to simmer, on a low heat.
6. you now want to get some spices, i tend to use ground cumin, mixed spices, extra spicy Cajun (herb and spice blend) and then some curry powder put all of these in to pestle and mortar, mix the spices then add 1 tbs of tomato puree and mix till like a paste, if it is not going to a paste you may have to add an extra tbs or two.
7.add the paste to the curry then add a tin of copped tomato's mix together, add a lid and leave to simmer (on a low temperature for 1 hour and a half, too, 2 hours). If the curry is not looking a yellowy orange you can add turmeric to make the colour change
