Preheat oven to 400 degrees. Place crust in pie pan or 10 inch tart pan. Bake 9 to 13 minutes. Do not prick bottom with fork.
In a medium skillet, melt butter. Add Mushrooms, onion and garlic. Cook until tender. Add chicken, Italian seasonings and wine. Cook until wine evaporates. Spread this mixture over par-cooked pie crust.
Sprinkle 2 tablespoons of each cheese over the chicken and veggie mix. In a bowl beat the eggs with the cream and Dijon. Can add some salt and pepper at this step if desired. Pour into pie pan. sprinkle with remaining cheese.
Bake for 23 to 28 minutes. Knife inserted in center should come out cleanm. Let stand 5 minutes.
