Suggest a better descriptionHeat 1 tsp oil in a large pan or wok over a medium heat and add the ginger and garlic and cook for a minute.
Add the chicken and cook for 5-10 minutes until cooked through.
Remove the chicken from the pan and add the final tsp of oil to the pan. Add the onions and cook for 3-5 minutes.
Return the chicken to the pan and add the curry powder. Mix through and cook for a further minute.
Add the chopped tomatoes and stock and simmer for 20 minutes until the sauce has reduced.
Rince the rice and cook in 400ml of water with the pilau spice.
Garnish with coriander.
