In a large pan sauté onions, garlic and green pepper in oil until soft. Add rest of sauce ingredients. Cook about 15 minutes.
Grease 9x13 glass baking pan. Spread thin layer sauce on bottom . Cover with layer of noodles, then chicken, then cheese mixture( cheddar, jack, cottage, parsley, green chili mix all ).
Repeat layers 2-3 more times, ending with cheese on top.
Bake at 375 degrees for 45 minutes.
If you make ahead and refrigerate, let it set out to get to room tempo before baking or increase baking time. I use light cheeses and Healthy Request soup.
