Christophers and Grandpa Clarks favorite!!!!
Put whole chicken in pot of water. Add onion,tomato,jalapenos and cumin and salt. Bring to a boil and cook for 45 min. Flip chicken over and cook 15 more min. Take chicken out of pot and cool in strainer. Meanwhile fry tortilas and place on paper towels. You should use 15 of the tortillas quartered. When tortillas are done. Take can of whole tomatoes and put in blender then add broth till almost to the top blend and then put in large bowl. Shred chicken and add to sauce. Now you layer, first tortillas,then chicken in sauce then crumbled cheese. Repeat until done. Bake @ 350 for 30 min. if still saucy bake for another 15 min.
Delish!!!! Great served with a fresh salad a fresh french baguette.
