Saute green chiles, season with salt and pepper. Add mixture to chicken.
To assemble enchiladas, set up an assembly line including: tortillas, enchilada sauce, chicken mixture and cheese.
Lay out tortilla shell, spread 2 tablespoons of sauce over the surface of tortilla shell. Add a generous spoonful of the chicken mixture in a line down the center of shell, then sprinkle 1/3 cup cheese.
Roll up shell and place seam side down in greased 9x13 pan.
Assemble remaining enchiladas. Spread remaining sauce evenly over top of enchiladas followed by any extra cheese.
Bake uncovered 20 minutes until enchiladas are cooked through.
