Easy enchilada casserole
Preheat oven to 350.
In a small bowl, stir together soup & sour cream. set aside.
In pan over med heat, in hot butter, cook onion & chili powder until onion is tender. Stir in chicken, chilies & 4 tablespoons of soup mixture. remove from heat.
To make enchiladas:
spread 1/2 cup chicken mixture along center of tortilla; fold and place seam side down in greased 9x12 baking dish. Spread remaining soup mixture over enchiladas & cover with foil. Bake at 350 for 15 minutes, uncover & add cheese on top and bake for 5 minutes more.
**sometime we double the soup, sour cream, onions, chili powder and cheese
