Chicken fajitas with salad, greek yoghurt dressing and guacamole (optional)
Brown chicken and set aside. Fry off the onions until browning, add carrots, 1 clove garlic, celery, sweet potato and half a pepper lightly colouring. Add broth and boil off veg until almost soft. Add chicken and seasoning as required. Add smoked paprika. Add more broth or water to avoid burning. Pour in wing sauce and sweet chilli sauce stirring in and simmering until sauce is thicker. To make greek yoghurt dressing, use low fat greek yoghurt and add one minced clove of garlic and half a stick of green onion. Add salt and pepper to taste. For guacamole add minced avocado, lemon juice, fajita seasoning, chilli flakes and a small pinch of smoked paprika to a food processor and pulse until smooth (or rough texture). Season with salt and pepper to taste or add more lemon juice if too thick. Assemble fajitas with warmed up flour tortillas adding grated cheese, salad and chicken mixture with yoghurt over the top.
