Very healthy and easy to make. Good with homemade guacamole.
In large saucepan and with 3 tbs. of broth, sauté chicken breast strips until cooked, about 5 mins. Add red bell peppers and onion ans sauté about 7 mins, adding additional broth, if needed. Combine olive oil, lime juice, garlic cloves, and spices. Add to the pan at end and remove from burner. Serve in tortillas and garnish with cilantro and goat cheese.
