Serve with great bread and steamed broccoli on the side.
Cut chicken breast in half crosswise and flatten in zip loc bag. Place on a plate and season with salt and pepper.
Place milk in shallow dish and bread crumbs on small plate.
Dip chicken in milk, then in bread crumbs pressing them into chicken to coat.
In skillet add butter and oil. Cook chicken 3-5 minutes each side. Remove to clean plate and keep in 200 degree oven to keep warm.
Sauce
Pour in 1/2 cup chicken broth and scrape any stuck on bits from skillet. Lots of flavor there. Bring to simmer. Add 2 teaspoons garlic and 1 cup heavy whipping cream. Bring up to simmer to thicken.
Add parmesan cheese, basil and pepper. Stir until smooth.
Serve chicken over fettuccine covered with sauce.
