It is very saucy.. could use 6 chicken breasts
Fry bacon in skillet, then set bacon aside to cool and crumble.
In bacon grease and butter sautee onions, garlic, mushrooms
Toss in Spinach once onions are cooked thru to warm spinach.
Line bottom of baking dish with vegetable mixture and place raw chicken breast on top.
Mix soup, lemon juice, milk and italian seasoning and pour over chicken & spinach.
Top each chicken breast with crumbled bacon.
Bake 25 minutes at 350 degrees
Remove from oven and top each piece with mozzarella cheese and Parmesan cheese, then return to oven for another 10-15 minutes or until chicken is cooked through and cheese is melted and brown.
Serve chicken and sauce on a bed of bow tie pasta.
